Are you bored or burned out on breakfast like me? Try out this new recipe of steel cut oats cooked in the instant pot mixed with fruit and chia seeds!



Ingredients:

➤ 1 cup of steel cut oats
➤ 3 1/2 cups of water (or use milk for more protein 💪)
➤ 1 tablespoon of raspberry preserves (I use sugar free)
➤ 1 teaspoon of chia seeds
➤ 1-3 dates or figs
➤ Optional: add in walnuts for more fatty acids

Directions:

➤ Toast oats for 7 minutes in instant pot
➤ Add water, cook for 5 minutes
➤ Scoop into bowl and add your toppings! 🥣

Makes 4 Servings
Exchanges: 3 Starch, 1 Protein, 1 Fat, 1 Fruit per serving

Nutritionally, this breakfast has so much to offer! Raspberries are a good source of Vitamin C. Dates are a good source of dietary fiber and potassium. Chia seeds offer omega-3 fatty acids to the mix.
